Rafael is an exceptional teacher and chef. I not only learned pasta making but about the slow food movement and their stamp of approval on particular foods. I spent 2 weeks in Italy and this was one of the best meals I had! Do not hesitate to take this class!!

We have attended many cooking classes in various countries. This was one of two we experienced offered in a private residence, and, by far was the better one. A very relaxing environment where, through shared convivial conversation, we learned, not only how to prepare three dishes, but a great deal about things like the history of balsamic vinegar and life in the restaurant industry, from which Raphael made a great decision to abandon. (BTW: He loved "The Bear".) He likes to limit the number of participants to 6 and this allows for a very personalized and low-key experience. Leaving the loft it seemed like we had just spent 3 hours with a close friend. And, he is a jazz lover! Bravo, Raffaele!This was one of our favorite cooking classes we have ever taken. This is a great way to spend a relaxing evening with good company, learn about the culture, and have a great meal. This experience is in Raphael’s small, cozy 2nd story apartment. There were 4 in our party, and we were joined by 2 others. We first chatted over wine and bread, and Raphael shared his story and experiences in the Italian cuisine business. We learned a lot about ingredient selection, cooking technique, and temperature. We then made tiramisu and pasta with tomato and Alfredo sauces. I learned enough that I can go home and recreate the meal, which was delicious! Plan on a leisurely 3-4 hours, and expect to be treated like family😊 Highly recommend!The class with Rafael exceeded my expectations. The class with Rafael exceeded my expectations. I assumed it would be a standard instructional cooking class, but it was a much more robust experience. Rafael warmly welcomed us into his home and started the evening off by sharing with us a little bit of background about himself which offered a nice foundation and context for the rest of our time with him. Over the course of the three hours, he imparted a lot of valuable knowledge and history about olive oils, balsamic vinegars, other ingredients we used and the cooking/preparation processes. In addition to making the cooking fun and informative, he also took a great interest in learning about us which made the evening all the more special. Rafael is super knowledgeable and friendly. In summary, it was a wonderful experience that we highly recommend.We had the best night! Rafael welcomed us very friendly and we felt like home from minute one. He told us with passion about his story and the italian kitchen, we made our own pasta, sauces and tiramisu. The food was the best ever and the wine was amazing!
