I was looking for an evening cooking class, as I am a chef and love to learn about the local cuisine when travelling, and don't particularly care for all the bells and whistle added on when taking a full-day class. Paper Tiger provided a great evening option, and so after a day of temple-hopping, we arrived at the restaurant, chose our menu to cook, indulged in a welcome drink, and then headed upstairs to get cooking. Turns out, we are the only students who have signed up this evening, and so have the pleasure of a private class with our teacher, Sang, who is quick, funny, and impressed that we can do more than just chop vegetables, so she puts us to work. We get to each choose a starter and main course to make, plus one dessert between the two of us, and we make it count, by picking the most typically Cambodian dishes available. First, we get to tour the neighboring market with Sang, who points out all the dried and fresh spices we will use, local vegetables we might not know about, fruits that we have seen at street vendor stalls. She takes us to a sweets vendor, who works with sticky rice and coconut milk, and helps us pick out some locally produced coffee to bring home. I enjoyed the chance to see the ingredients at the market, and the chance to ask questions to Sang. This tour will make our future market visits less daunting, and we will know what we are looking at! I have to say, I am impressed with the level of involvement we have in the class, but that might just be Sang playing to our capabilities. Sure, we chop the vegetables for our dishes, and the aromatics to pound into curry paste, and of course we roll filling into rice paper for fried Cambodian spring rolls, but she also has me cook the curry paste with coconut milk, with the fish and noni leaf for the fish amok, and my husband makes the seasoning and sauce and beef for his beef lok lac. He fries the spring rolls, while I toss a green mango salad. Every step, Sang is over our shoulder, explaining what needs to be done next, but letting us do all the work. With the exception of cooking the rice(thank goodness), and platting the final dishes, we actually made EVERYTHING we got to eat for dinner. And oh my was it ever DELICIOUS! But it was a lot of food, and though we ate everything to not insult our teacher, we were absolutely STUFFED by the end of supper, and basically had to waddle back to the hotel, just to fall into a food coma. Things to remember: come prepared to cook! This is no demonstration, this is a full-on cooking class. Also, come with an appetite! You will eat SO MUCH tasty food, and you will not want to leave any on the plate. Trust me. In a sea of cooking class options in Siem Reap, go with a sure-fire option, and book your class at the Paper Tiger. It was so much fun to see how every ingredient came together to form the most delicious flavours. Channy and Sopheap were exceptional leaders and chefs. We had a group of three teachers and twelve teenagers. Absolutely worth your time. Channy and Sopheap were friendly, professional, and experienced. I was immediately at ease seeing how organized they were. We had many different orders (for me: spring rolls with shrimp, amok with fish) and they made it look easy. They made sure everyone was involved in all steps of the process. You could tell it was not their first time leading a group in cooking -at the same time, they were friendly and made us feel welcome. It was a memorable activity, cooking local foods in cute chef outfits and it ended in a feast.I heard and read only good things about Paper Tiger, that's why I went for this cooking class and I didn't regret. The food doesn't only look amazing when it's finished but tastes absolutely delicious and was enough for two so they packed the rest for me. Two friends of mine went together and they could even choose different dishes (starter + main) to make!We had a great afternoon and made delicious food, the cook was very nice, spoke English well and gave clear instructions. Everything was clean too.
