Overview

I am originally from the Zoque ethnic group of the Chimalapa community, Isthmus Region, in the state of Oaxaca, I come from a traditional chocolate-making family, here I will be able to share my experience and knowledge that I have acquired over the years.

Come and learn about our culture and prepare your own chocolate in a traditional way, with basic equipment that you can replicate at home!

Suitable for Children, adults and anyone who wants to make their own Oaxacan chocolate.
Suitable for Vegetarians and Vegans.

What to expect

In this experience you will learn how to make your own chocolate, in a traditional way, imitating the process of our community.
We will start with an introduction to the world of cocoa from Oaxaca, to identify the organoleptic qualities of each seed, you will learn the difference between cocoa, commercial chocolate and a conscious chocolate.

Following the introduction, we will roast the cocoa in a clay comal, this comal comes from the community of San Marcos Tlapazola (Central Valleys, Oaxaca).

We will peel cocoa with our hands; Carrying out this ritual, we will tell part of the history and culture of Cacao in our community.

We will transform the cocoa into chocolate in an artisanal way.
Here you will choose the percentage of sugar for your chocolate, mixing it with different ingredients from the region.

To finish, we will teach you how to prepare your drink with a grinder; traditional kitchen utensil, which helps us to incorporate and integrate the chocolate.

We will close tasting your drink with a cocoa-based sandwich.
Each one takes their own chocolate made with their own hands.
