What to expect
Silvia, Greg and Agriturismo L'Assiolo invite you to your own personal cooking class set at a beautiful local organic olive and orange farm just outside of Matera in the Italian countryside.
First up, a quick tour of the farm so that you can really understand where the food we use in this part of the world comes from. Learn all about our 'liquid gold', extra virgin olive oil, and how we produce it with our very own trees. What’s more, you’ll get the chance to eat some fruit straight from a tree - just like a real Italian farmer!
Then, it’ll be straight into the kitchen where you’ll meet Silvia, the daughter of the family, who has had over 20 years of seeing her Mamma wow local and international guests with her traditional Matera, farmhouse cooking.
You’ll learn the authentic, original way to make fresh pasta, a typical pasta sauce and also two typical dishes from Matera. From secret techniques to our philosophy of simplicity, this special experience in the countryside of Southern Italy will whisk you away to a side of Italy that is truly authentic.

We picked delicious oranges from trees planted by her grandfather, saw some of the animals on the farm, admired the fabulous oven used by her dad, used the huge kitchen for a cooking lesson — where her mum serves a huge 4 hour Sunday meal to people as far away as Napoli! I was envious and wished I could also enjoy this meal—next visit! They are very knowledgeable, kind, and respond promptly to any questions I had! So much more than a cooking class! This was a number of experiences in one. We began with a tour of this proudly organic farm, meeting some of the animals and taking a stroll through the olive grove. The scenery and sounds were something else - so very relaxing. And we got to pick straight from the tree and eat some blood oranges. They were absolutely delicious! We then tried our hand at making some pasta from scratch, before turning to some cooking. Silvia guided us throughout. Her expertise, handed down from her mother and grandmother, really shone through. At the end of the visit we sat and enjoyed the delicious homemade food and wine, which was just exquisite. Greg and Silvia, and their entire family, were so welcoming and genuine. For anyone looking for a get away from the hustle and bustle of busy cities, tourist traps etc, and experience serenity combined with Italian traditions and warm hospitality, this is perfect. Greg and Silvia picked us up and dropped us back off in Matera, which was really convenient if you don’t have your own transportation. Greg and Silvia were most graceful and generous hosts who shared not only their knowledge and passion for the region but also tips for places to visit and eat. My favorite part was the pasta making (Silvia was a very patient and talented instructor) and of course, the lunch itself. The food just kept coming! Everything was homemade by Silvia and her mother, or sourced nearby. Definitely worth the 1.5 hour drive from our hotel in Ostuni.Great experience with Silvia and Greg!!! They are the best hosts and Silvia is a great cook!!! Matera offers a unique experience with Italian fresh pasta, local wine, cheeses and dry cured meat and the best company!!!!
